Recipe: Grissini

Grissini (Italian Breadsticks)

  • 2 tbsp fresh (cake) yeast
  • 2 tsp sugar
  • 1-1/4 cups water
  • 1 oz. olive oil
  • 2 cups white flour
  • 2 cups whole wheat flour
  • 1 tbsp salt
  • 1/2 cup parmesan cheese


   Add the yeast, sugar and water to a bowl. Allw to stand 15 minutes until yeast proofs.

   Add the flour, oil and salt. Kneed for 15 minutes until silky smooth. After kneeding, place dough in a bowl and brush lightly with olive oil. Cover and allow to double in size (1.5 hours)

   After rising, smash dough back down and roll out to 1/4 inch thickness. Use a sharp knife and cut dough into 6 inch long, 1/2 inch wide sections. Roll each section on counter top until it is 10 - 12 inches long. (Stretch them do the desired size)

   Sprinkle with optional cheese and bake on an oiled cookie sheet at 450 degrees F for 10 to 15 minutes, or until golden brown and dry.
