Thai Sweet Chili Sauce
- 3 tablespoons hot ground chili paste
- 2 teaspoons minced garlic
- 1/2 cup rice wine vinegar
- 2/3 cup water
- 2/3 cup sugar
- 1 teaspoon salt
- 4 teaspoons cornstarch
- 4 tablespoons chopped cilantro
Add everything together except for the corn starch and the cilantro. Bring it to a boil and then add the corn starch. Reduce the heat and continue to boil for about 15 minutes. Stir frequently to keep from burning. When mixture has reduced about 1/3, add in cilantro and stir for another minute. The sauce is now done.
You can use the sauce hot or put it in the fridge and use it cold. The colder it is the more it congeals. We use this sauce on shrimp, lobsters, fish, onion rings and even an occasional burger. It's very tasty.
