Recipe: Jerk Buffalo Wings


Jerk Buffalo Wings
  • 5 Pounds of Wings
  • 1 Cup Dark Brown Sugar
  • 1/4 Cup Jerk Seasoning
  • 1/4 Cup Cocoa Powder
  • 2 Tablespoons Kosher Salt 
Separate the wings at the leg/thigh point and discard the wing tip. Mix the brown sugar, the jerk seasoning, the cocoa and the salt in a bowl. Make sure the chicken parts are reasonably dry and then roll them through the mixture one a time. Make sure each piece is well coated.
Heat your grill to medium and then put the wings on. Monitor them closely so as to prevent burning the sugar based dry rub. Total cook time is about ten minutes, but I keep the grill lid open and turn the wings about every two minutes.
